Granola

I make a batch of this gran­ola every 2–3 weeks.

  • 600g rolled oats
  • 150g raw slivered almonds
  • 100g raw sun­flower seeds
  • 100g raw pump­kin seeds
  • 15g wheat germ
  • 15g ground/cracked hemp seeds
  • 15mL cin­na­mon
  • 2.5mL salt
  • 200mL honey
  • 60mL can­ola oil
  • 10mL vanilla extract
  • about 500mL dried fruits

I mix and match the nuts and seeds with every batch. Some­times I add cashews, some­times I’m miss­ing a seed and just leave it out.

As for fruits, I’ve tried everything. Rais­ins, dried cher­ries, dried blue­ber­ries, dried cran­ber­ries, cut up dried apricots, chopped can­died ginger, dried pine­apple, goji ber­ries. Experiment!

  1. Mix all dry ingredi­ents except fruit
  2. Add wet ingredi­ents and fold until com­pletely combined
  3. Spread evenly on 2 parchment-covered half-sheet pans
  4. Bake for 30–45 minutes at 275F or until golden, stir­ring and rotat­ing pans every 10–15 minutes
  5. Allow to cool completely
  6. Gently fold in fruit
  7. Store in an air­tight con­tainer, in the refrigerator
